Whole ham stuffed with a fruity mixture, glazed with golden syrup, jaggery and mustard, and studded with cloves

Ingredients Of Glazed Ham

  • 3 kg ham – soaked overnight
  • 1/2 kg apples
  • 1 Tbsp butter
  • Grated rind 2 limes
  • 3 Tbsp raisins
  • 3 Tbsp chopped garden herbs
  • Salt and pepper
  • 2-3 Tbsp sugar
  • For cooking liquid:
  • Water to cover
  • 2 bottles beer
  • 1/2 kg assorted root vegetables
  • Wisp of hay
  • 1 tsp peppercorns
  • 3 tsp mustard powder
  • 1 bay leaf
  • Pinch of grated nutmeg
  • 1 parsley stalk
  • 2 chopped apples
  • For the glaze:
  • 4 Tbsp golden syrup
  • 100 gm grated jaggery
  • 1 tsp prepared mustard
  • Cloves to stud

How to Make Glazed Ham

  1. 1.Drain ham.
  2. 2.Place apples in the pan with butter and rind.
  3. 3.Cover and cook until apples soften.
  4. 4.Stir in raisins herbs, sugar and seasoning.
  5. 5.Stuff into ham.
  6. 6.Place the stuffed ham in a large pan.
  7. 7.Add cooking ingredients.
  8. 8.Simmer for 1 1/2 hours until meat is tender.
  9. 9.Leave to cool.
  10. 10.Drain and stud with cloves.
  11. For the glaze:
  12. 1.Warm syrup and pour over ham.
  13. 2.Combine jaggery and mustard with vinegar to moisten.
  14. 3.Spread over ham.
  15. 4.Bake at 180 degrees C for 20 minutes until golden in color.
